Watermelon Mojitos

Today is a day that calls for toasting.

But not like bread.

I mean holding a drink up in the air.      I’ve just now realized how homonymous that word could be.


Here’s to fresh fruit, rambunctious companions, almost red drinks and rainy summer days.

Here’s to making the most of the rainy days, as well as the sunny ones.

Here’s to a land built on principles of allowing room for individuality, rambunctiousness and open expression.

You’re not perfect, nowhere close. Probably drastically further from perfection than a lot of people even care to notice… but so are a lot of us. All the same, you’re certainly one of a kind, and that certainly makes you lovely. So cheers to you, America.

You’re quite a lady indeed.

Watermelon Mojitos 

Adapted from Food & Wine

  • 20 mint leaves, chopped
  • 2 tablespoons sugar
  • 1/2 cup fresh lime juice
  • Crushed ice
  • 3/4 cup light rum
  • 6 ounces seedless watermelon, pureed
In the bottom of a large shaker, muddle the mint, sugar and 1/4 cup of the lime juice. Fill the shaker with ice. Add the rum, watermelon and the remaining 1/4 cup of lime juice; shake well. Strain into glasses over ice. Garnish with fresh mint.
