Creamy Avocado & White Bean Dip

Know how they say it’s the little things?

They’re not kidding.

We’re barraged most everyday with dirty filthy lies.

Coworkers lie to you, friends lie to you, complete strangers lie to you… like I opened a new tube of mascara yesterday morning. The description as to what effect this product would impact on my lashes–  “full”
I put it on.    Know what I said?       Full.    Yes.   Totally.     Full of lies.

But as much deceit as we may encounter throughout the day, I stick by my original statement.

Humanity did not lead us astray when it comes to certain matters.

It truly is the little things that make each day delectable.

No lies.

All those little attention-grubbing issues who are all up in your face right now…

The 200 pages you need to read.

The umpteen pages you need to write.

The pounds hanging on your hips that need some serious tough loving.

The sleep you should be getting.

The ulcer you feel certain is growing in your stomach due to an increasingly awful coffee abuse situation.

Those things are all important. But they become less important after a while. In fact, most of them will probably just fade away once they’ve received their due attention.


And even if something that’s clinging to your back right now indeed turns out to be of long-term significance in your life, well great… then it will hopefully give you different feelings later.
Not tense feelings. The kind of feelings we cherish.

Something closer to the little things feelings.

Like when you find the perfect dress in the perfect store that hurts to leave because the place just reeks of perfection. And so you buy the dress, because you barely ever buy the dress…  and you deserve to take a little bit of perfect away with you.

And when you find yourself remarkably even happier to see your best friend glowing in the dress that’s beyond perfectly beautiful on them.

The late-night philosophical conversations that unfold on your kitchen counter  as a result of plans deviated and making a fresh pot of coffee at 12 am.

Bearing witness to someone watch The Breakfast Club for the first time in their ever loving life.

Making a meal the has you enjoying veggies far more than you could have possibly enjoyed ice cream and brownies at that moment.

The copious levels of laughter and self-realization that accompanies watching Shnit Girls Say videos for half an hour.

Get what I’m saying?

The little things that make your heart feel light.

Like knowing you’ve helped a perdy pair of ripe avocados fulfill their destiny atop a pita chip.

Few things are more delicious than dealing out life purpose for fruit.

Not to mention, dips usually denote friendly gatherings…

So, I suppose we can conclude that  good dip and a full bag of chips fuels the little things?

Truth. I believe we can.

We should all make more dip this week.

Creamy Avocado & White Bean Dip

  • 2 ripe hass avocados, peeled and pitted
  • 1 (15) ounce can cannellini beans, rinsed and drained
  • 2 garlic cloves
  • 1 Tbsp fresh lemon juice
  • 1/2 cup packed fresh parsley leaves
  • 2 Tbsp plain yogurt
  • 1/2 cup diced fresh tomatoes
  • 1/2 tsp red pepper flakes
  • sea salt and pepper to taste
Combine the avocados, beans, garlic lemon juice, parsley, and yogurt in the bowl of a food processor and process until smooth. Stir in the fresh tomatoes and red pepper flakes. Add salt and pepper to taste. Serve with your preferred dippers.
