White Bean Patty Melt

Know what? I feel like today is an excellent day for breaking stereotypes. Mark it, Tuesday September 28, 2010…walls are coming down. We should do it with a patty melt. Why?

  1. Because patty melts are flipping delicious.
  2. Patty melts  make stellar vehicles for melty, cheesy justice. Obviously.

We’re gonna make bean patties. Bean burgers are all trendy, and chic, and vegetarian-friendly, and whatnot. Don’t forget to complement their natural chic-ness with some smart accessories, like spinach and tomato. Oh plus lots and lots of cheeeeeeese.

Lousy photographer forgot the most important part, what a goober. Anyway, yes cheese, very crucial. Use whatever  floats your boat. Personally I think blue or gorgonzola would be jamming.

Now let’s shake things up a bit. Instead of using cliché black beans, break out a can of white. Oh, and by the way, it’s no longer vegetarian friendly…we need us some BEEF.

Imagine I said that last part in an ultra manly voice, because that’s how it sounded in my head.

Right, uhh, I swear after some good pan therapy our little greyish lump looks alot more appetizing.  I mean it is rough fighting stereotypes while still being so dagum trendy and hip. A massage alone just aint gonna do it for Patty, she needs a sauna too.

See, better already. Real talk though, patty melts (no matter how chic) are insanely friendly food. Comfort food, if you will. They’re not trying to exclude anyone. I bet you anything they won best all-around in highschool…probably best dressed too.

The point is, if you want to stick with a vegetarian version, it’s all good. Just up your bean content to cover the loss and act like ground beef doesn’t exist. I just really dig the way beans and BEEF compliment each other. I think they make a right peachy couple.

Woo doggy, look at us breaking down barriers in the kitchen. Hannah Montana was so right, you can get the best of both worlds.I knew that girl was a smarty pants, her first name rhymes with her last for goodness sakes. Could you expect any less from the spawn of Billy Ray Cyrus?

Check out my healthy green beans. Makes people think I  didn’t go eat brownies after this. If the vegetation is a little too much to handle right now,  by all means, pretend they’re french fries. Baby steps people.

White Bean Patty Melt

  • 1 can white beans (15 oz)- drained and rinsed
  • 3/4 lb extra lean ground beef
  •  1/2 medium yellow onion, finely diced
  • 1/2 cup bread crumbs
  • 1/2 tsp salt
  • black pepper to taste
  • 2 tsp garlic powder
  • 1 tsp parsley
  • 1 tsp Italian seasoning
  • 8 slices hearty sandwich bread
  • fresh spinach
  • tomato slices
  • your preference of cheese, enough to top 4 patties

In a medium bowl, mash the white beans using the back of a fork or a potato masher.

Add in beef, onion, bread crumbs, and seasoning. Mix with hands to evenly combine. Form 4 flat patties.

Spray a large, non-stick skillet  with cooking spray and place over medium heat. Once hot, place patties in pan and cook until browned on one side- about 6 minutes. Flip the patties and continue cooking until cooked through. Remove patties from pan.

Re-spray the pan with cooking spray. Assemble sandwich by topping one slice of bread with desired cheese, place patty on top, then top with spinach and tomato. Place another slice of bread on top.

Place the assembled sandwiches cheese side down and cook until cheese melts and bread is browned and crisp. Flip and cook to brown other side.

Remove, serve, and enjoy!
