Chunky Blue Cheese Dip

This one goes out to celery…

Celery, there’s 7 things I hate about you.

You’re bland, you’re weird, you get rubbery gross after a  while.

You leave those terrible stringy strings in my smile.

You’re calorie free, so I should love thee, but no one wants plain celery.

You try to wear peanut butter like that’s OK, when peanut butter and raw vegetables is just a
NO WAY .

But the seventh thing I hate the most that you do… you make me love blue.     cheese.     dip.

 It’s true.

It’s a weird love triangle we have. Celery, blue cheese dip and I.

No. It’s honestly more of a quad. Chicken wings are an important part of this too.

I’ve always hated plain celery sticks. Never liked chicken wings. Maintained a level of general indifference towards blue cheese dressing. But a twilight encounter at a little dive called Oslo’s in Cheraw, South Carolina changed all that. Finally breaking down to try all three together fostered in me a deep admiration for each element and its special role in that classic manly man grub composition.

If you don’t feel like a manly man while eating chicken wings, celery and blue cheese dip, please pardon that last statement. I thought it a widely agreed upon sentiment.

So anyways, now, I still don’t much care for celery by its lonesome… but I’ll take it.
Chicken wings–good chicken wings–are so legit.
Blue cheese dip/dressing/creamy spread/whatever you like to call it… I’m all about it. Scoop it with chips, dip in some veggies, slather it on a burger, all good.

As seemingly pedestrian and lardy, easy cheesy as it is, this creamy dip with all its blue cheese chunk splendor rarely fails to meet positive reviews. Especially alongside well-crafted chicken wings and celery sticks. Or a platter loaded up with fresh crudites, apple/pear slices and toasted spiced pecans. Spiced nuts and blue cheese are great friends, just so you know.

Focusing on what’s going along with your chunky blue cheese dip helps you to block out the disturbing white globs going into it.

Chunky Blue Cheese Dip

Adapted from 

  • 8 ounces cream cheese, softened
  • 1/3 cup sour cream
  • 1/2 teaspoon white pepper
  • 1/4 to 1/2 teaspoon salt
  • 6 ounces crumbled blue cheese
  • 1/3 cup minced chives

In a small bowl, beat the cream cheese, sour cream, pepper and salt until blended. Fold in the blue cheese and chives. Serve as desired.
